 THE INGREDIENTS

2 large eggs ½ cup oil  ½ cup sugar 1 teaspoon vanilla extract 2 ½ cups all-purpose flour ½ teaspoon baking powder ¼ teaspoon kosher salt ¾ cup filling (poppy seed,  jam, or jelly)

These are my favorites!

 THE INGREDIENTS

Mix, chill, roll, and cut

Mix the dough, chill it briefly, and then roll it out to about 1/8-inch thickness. Cut out 2 1/2-inch circles

Add your fillings

Add your fillings! Use about a teaspoon of filling per round. Don't overfill or they'll explode!

Form into triangles

Fold three sides up and pinch the dough together where the sides meet to form triangles.

Bake to perfection!

Bake the cookies on an ungreased baking sheet for about 24 minutes, until lightly golden.
