Air Fryer Artichokes are a quick and delicious vegetable side dish. Much faster than steaming or boiling, air frying artichokes takes less than 10 minutes. They’re even better when you serve them with a delicious Garlic Aoili for dipping.

Ingredients
For the artichokes
2artichokes
1tablespoonolive oil
½teaspoonkosher salt
½teaspoonfreshly ground black pepper
1teaspoongarlic powder
1lemon
For the garlic aioli
½cupmayonnaise
1tablespoonminced garlic
½teaspoonfreshly ground black pepper
1teaspoondried dill
1teaspoonpaprika
1tablespoonfreshly squeezed lemon juice
Instructions
To prepare the artichokes, trim the stem ends and pull off the bottom outer leaves.
Using a serrated knife, cut off the top ½ inch of the artichoke, cutting off the pointy tips of the leaves at the top/center.
Use a pair of kitchen shears to snip off the sharp pointy tips of all of the outer leaves.
Cut each artichoke in half and scoop out the hairy choke at the center using a metal spoon.
Squeeze some lemon juice over the cut parts of the artichoke to prevent browning.
Brush the olive oil all over the artichoke halves. Season the cut side with salt, pepper, and garlic powder.
Place the artichoke halves in the air fryer basket, cut side down, and cook at 350°F for 4 minutes. Flip over and cook for 4 more minutes.
While the artichokes are in the air fryer, make the aioli. In a small bowl, stir together the mayonnaise, garlic, pepper, dill, paprika, and lemon juice.
Remove the artichokes from air fryer and let cool for a couple minutes.
