Ingredients
For the fries
3 to 4zucchinicut into 3-inch-by-1/2-inch sticks
¾cupall-purpose flour
3eggs beaten
1 ½cupspankouse homemade panko or store-bought
¾cupgrated parmesan cheese
1teaspoongarlic powder
½teaspoonkosher saltplus additional for garnish
Olive oil cooking sprayoptional
Dried parsleyfor garnish (optional)
For the spicy ketchup
½cupketchup
½teaspoonchili powder
1teaspoonhot sauceor more to taste
Instructions
Pat the zucchini strips dry.
Put the flour in a shallow bowl. Put the eggs in a separate bowl. In a third bowl, combine the panko, cheese, garlic powder, and salt.
Coat the zucchini sticks first in flour, then in egg, and finally in the panko mixture. Lay they in a single layer on a baking sheet while you bread the remaining zucchini sticks.
Arrange the zucchini fries in a single layer in the air fryer basket or on the air fryer trays, depending on the type of air fryer you’re using. If you’re using a basket style air fryer, you’ll need to work in batches.
Spray zucchini fries with olive oil if desired.
Cook at 350F for 8 to 10 minutes, until they’re crisp and golden brown.
Remove from the air fryer and season with a few pinches of salt.
To make the spicy ketchup, in a small bowl, combine the ketchup, chili powder, and hot sauce and stir to mix well.
Serve these crispy Zucchini Fries hot, garnished with dried parsley, and with the Spicy Ketchup or another dipping sauce alongside.
Notes
You can line your air fryer basket with a parchment paper liner if desired.
If you're using an air fryer with a nonstick basket, use olive oil in a spray bottle that doesn't contain any propellant (the propellant will erode the nontsick coating of your air fryer basket).
You can use your air fryer to reheat the zucchini fries and they will be crispy again.
