Ingredients
8ouncescooked chickendiced or shredded
¼cupmayonnaise
1 ½teaspoonsDijon mustard
1tablespooncurry powderor to taste
1tablespoonchopped cilantro
Kosher salt
freshly ground black pepper
1medium applepeeled, cored, and finely chopped
1stalk celeryfinely chopped
2scallionsthinly sliced
1small carrotpeeled and grated
¼cuptoasted cashews
¼cupraisins
Sesame-chili oil or cayenne pepperto taste (optional)
Instructions
In a medium mixing bowl, toss all of the ingredients together until well combined.
