Ingredients
2tablespoonslime juice
1tablespoonrice vinegar
1teaspoonsugar
¼teaspoonkosher salt
1tablespoonolive oil
2tablepoons finely chopped red onion
4smallish seedless cucumbersabout ¾ pound, peeled and sliced
½red bell pepperthinly sliced
¼cupcilantro leaves
¼cupchopped mint leaves
⅓cupshelledroasted, unsalted peanuts
Instructions
In a small bowl or a jar with a tightly fitting lid, combine lime juice, rice vinegar, sugar, and salt. Add olive oil and whisk or shake vigorously until well combined.
Add red onion and set aside for 15 to 30 minutes.
In a medium bowl, toss cucumbers, bell pepper, cilantro, mint, and peanuts.
