Ramen tare is the seasoning mixture that gives a bowl of ramen it's depth of flavor. This one has loads of umami thanks to red and white miso paste, Japanese sesame paste, and gochujang (Korean fermented chile paste) or chile paste.

Ingredients
1/2cupmiso pasteuse 1/4 cup white miso paste and 1/4 cup red miso paste or 1/2 cup awase miso paste
1/4cupkosher salt
1/4cupwater
3tablespoonsJapanese sesame paste
1/4cupgochujang or chile pastelike sambal oelek
2tablespoonssesame oil
1tablespoonrice vinegar
Instructions
Combine the miso paste, salt, water, sesame paste, gochujang, sesame oil, and rice vinegar together in a small bowl and mix to a paste.
Use to season bowls of hot ramen broth.
Notes
1. Use Korean gochujang or a plain chile paste like sambal oelek.2. If you don't have Japanese (or Chinese) sesame paste, substitute smooth, all-natural, no-sugar-added peanut butter.
