Air Fryer Hot Cocoa Cookies

Ingredients
⅔ cup granulated sugar
⅔ cup brown sugar
1 cup (2 sticks) unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
3¼ cups all-purpose flour
½ cup hot cocoa mix
1¼ teaspoons baking soda
½ teaspoon salt
2 cups semisweet chocolate chips
2 cups mini marshmallows

Instructions

  1. Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  2. Add the eggs and vanilla and mix until smooth.
  3. In a separate bowl, whisk together the flour, hot cocoa mix, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
  5. Stir in the chocolate chips and half the marshmallows.
  6. Line the air fryer basket with parchment paper. Scoop dough into small balls and arrange them with space between each.
  7. Air fry at 300°F for 6 minutes. Open the basket, top each cookie with 2 or 3 marshmallows, and air fry for another 3 minutes, until the marshmallows are lightly toasted.
  8. Let the cookies cool on a wire rack before serving.

These cookies keep well for a few days in an airtight container—but they’re best when they’re still a little warm and the marshmallows are soft.
