Plump, tender shrimp are seared in a skillet and then tossed in a rich, fiery sauce made from dried chiles.

WHAT YOU NEED
Soak the chiles
Stem and de-seed the chiles, then cover them with boiling water.
Make the sauce
Drain the chiles and put in a blender/food processor with the remaining sauce ingredients.
Puree the sauce
Process the sauce ingredients until smooth, adding a bit of water or the reserved chile soaking water as needed.
Sear the shrimp
Sear the shrimp in a large skillet.
Add the sauce
Add the sauce to the shrimp in the skillet, toss to coat, and then simmer until the sauce is thick and bubbling.
