Ingredients
1poundchicken filletsuse breast or thighs
1cupall-purpose flour
½cupcornstarch or potato starchor use an extra ½ cup flour
2teaspoonskosher saltdivided
1teaspoonpaprika
1 ½teaspoonsblack pepperdivided
2large eggsbeaten
4burger buns
Lettucetomato slices, pickle slices, pickled jalapeno slices, coleslaw, mayonnaise, hot sauce, barbecue sauce, or any other desired toppings
Instructions
Season the chicken with 1 teaspoon of salt and ½ teaspoon of pepper.
Stir the flour, cornstarch, the remaining teaspoon of salt, the remaining teaspoon of pepper, and the paprika together in a shallow bowl.
Dredge each piece of chicken first in the flour mixture, then dunk in the egg, and then finally in the flour mixture again.
Line the basket of the air fryer basket with a sheet of perforated parchment paper, if using.
Spray or brush oil all over the chicken pieces.
Arrange the chicken pieces in a single layer in the air fryer basket (cook in two batches if necessary).
Set the temperature to 400ºF and cook for 8 minutes.
Turn the chicken pieces over, spray or brush them with a bit more oil, and then cook on 400ºF for another 7 minutes or so, until the chicken is golden brown and crisp all over.
Place one chicken fillet on the bottom half of each bun and top with your desired toppings.
