Air Fryer Enchiladas

Air Fryer Enchiladas are a delicious change from the usual tacos, burritos, and bowls we rely so heavily on for quick weeknight meals. These beef enchiladas are flavourful and super easy to make in the air fryer.

I adore my air fryer for easy meals during the week. This Air Fryer Enchiladas Recipe is perfect. Corn tortillas are wrapped in seasoned ground beef, then topped with homemade Enchilada Sauce, if you like, or store-bought red enchilada sauce. A generous sprinkling of cheese finishes it off.

Air frying enchiladas makes the edges crispy and the cheese nice and melty and golden brown. Combined with the tender and flavorful beef inside and the sauce-drenched tortillas, the whole thing is a celebration of textures and flavors.

All you need to add is a side of beans (try my Instant Pot Refried Beans) and a quick salad for a complete, nutritious, and delicious meal that can be on the table easily in under 30 minutes. These Air Fryer Enchiladas are ridiculously easy to make. Here’s how:

  1. Add a little of the meat to the enchilada sauce and then put a few spoonfuls of sauce in the bottom of a baking pan that will fit in your air fryer. Spread it out to cover most of the bottom of the pan.
  2. Heat the tortillas briefly in the microwave to soften them and make them pliable.
  3. Add a couple of spoonfuls of the meat to each tortilla along with a little cheese.
  4. Roll the tortilla around the filling and place it in the baking pan.
  5. Once you’ve filled the baking pan (you’ll likely need to cook in 2 batches), cover the enchiladas generously with sauce, making sure they are fully covered with sauce, and top with more cheese.
  6. Place the pan in the air fryer basket and air fry until the tortillas are crisp and the cheese is fully melted.
  7. Enjoy!

What to serve with them

This air fryer enchilada casserole dish is so easy to make, you’ll have plenty of time to pull together sides. I love serving Instant Pot Refried beans with enchiladas.

Air Fryer Enchiladas with Beef Filling

These beef enchiladas are filled with seasoned beef and cheese, and then topped with red chile enchilada sauce and more cheese. They're super easy to make in the air fryer.

Ingredients
  

  • 2 cups red enchilada sauce homemade or canned
  • 1 1/2 pounds ground beef cooked with taco seasoning
  • 12 to 16 corn tortillas
  • 2 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped chives for garnish (optional)

Instructions
 

  • In a medium bowl, combine the enchilada sauce with 1 cup of the meat.
  • Add 2 or 3 spoonfuls of the sauce mixture to the bottom of a baking pan that will fit in your air fryer and spread it out to cover the bottom of the pan.
  • Microwave the tortillas for 15 seconds to make them pliable.
  • Add about 2 tablespoons of the meat to each tortilla. Top with a little bit of cheese and roll the tortilla up around the filling. Place in the pan, seam side down.
  • Once the pan is filled, top generously with sauce and cheese. Make sure the sauce and cheese are evenly distributed across all the enchiladas so that they are fully covered.
  • Place the pan in the air fryer basket and cook at 375°F for 6 to 8 minutes, until the tortillas are crisp and the cheese is fully melted.
  • Enjoy!

Notes

You can store leftovers in the refrigerator for up to 3 days or in the freezer for up to 3 months.

  1. Just found your site and am enjoying browsing! 🙂 This recipe looks WONDERFUL, but what is the SERVING SIZE? You say “1 serving” is 674 calories (eeeek if that is just 1 enchilada, but I don’t think that could be right), but you don’t say HOW MANY ENCHILADAS is a serving! You also say to use 12-16 corn tortillas, but that means this recipe can make 12-16 enchiladas … so again, it’s really important for us to know how many would equal 1 serving. Thanks! 🙂
